I first tried these cookies at the White Company press day, and thought they were so good I would have to try making some. Lucky for me there was a recipe in the goodie bag! I’ve made these a couple of times and they are so quick and easy, plus all that carrot must make them healthy? At least that’s what I’m telling myself.
Ingredients85g butter 130g sugar 130g plain flour 1/2 tsp baking powder 2 small carrots, peeled and grated 1 tsp cinnamon
Preheat your oven to 180. Cream the butter and the sugar until pale and fluffy. Add the flour and baking powder. Add the grated carrot and the cinnamon and blend again. If the mixture is looking a bit dry add a tablespoon of water
